If there’s a “BBQ Rub Hall of Fame,” Cimarron Docs is surely in it. In fact, there’s been a layer of this stuff on almost every competition rib we’ve ever turned in. The opening hit of heat is chased by smoked garlic, onion and a glorious sweetness that runs throughout.
Smoky, savory and sweet, with just enough salt to keep it all in balance. The chili-pepper heat lands right in the “interesting” zone, but the abundance of sugar keeps it all in check. And yeah, this stuff wins on ribs. (Chicken, too, since Ms. Freak’s giving away secrets.)
